Maple Energy Bars

Snacking on a Low FODMAP diet can be tough. Making a batch of these delicious energy bars though is super easy and the oats are a great boost mid-morning, mid-afternoon or if you’re like me as a sweet treat in the evening!

Ingredients:

  • 100g of Butter
  • 120g of Maple Syrup
  • 120g of Brown Butter
  • 240g of Oats
  • 100g of Raisins
  • 100g of Pecans
  • 75g of Pine Nuts

Method:

1) Pre-heat the oven to 150 Degrees Celsius (Fan Oven) and prepare a medium sized baking tin with baking parchment or butter

2) Melt the butter, syrup and sugar on a low heat until combined

3) Take the mixture off the heat and add the oats, raisins, pecans and pine nuts (Note: It will not “hold” together like a dough but if it seems too crumbly add a little more syrup. Don’t worry it should firm up in the baking and cooling process to come!)

4) Tip the mixture into your prepared tin and press/flatten with a wooden spoon

5) Bake in the oven for 25-30 minutes or until golden brown

6) Leave to cool (this will ensure the mixture holds together) and then cut into squares and store in a container until ready to enjoy!

Chewy Chocolate Chip Cookies

These cookies are super simple to bake and are deliciously chewy – plus they are loaded with dark chocolate – what’s not to love!

Ingredients:

  • 100g Rice Flour
  • 35g Almond Flour
  • 1/2 tsp Xantham Gum
  • 1/2 tsp Baking Powder
  • 120g Butter (Room temperature)
  • 200g Sugar
  • 1 Egg
  • 1 tsp Vanilla Extract
  • A Pinch of Salt
  • 125g Dark Chocolate Chips (70% Cocoa)

Method:

  1. Pre-heat the oven to 180 Degrees Celsius (160 Degrees Celsius fan) and line a baking tray with baking parchment
  2. Cream the butter and sugar together until smooth and fluffy
  3. In a separate bowl mix together the dry ingredients (rice flour, almond flour, xantham gum, baking powder, salt)
  4. Add the egg and vanilla extract to the butter and sugar mixture
  5. Once combined slowly stir in the dry ingredients
  6. Lastly add in the chocolate chips
  7. Set aside the cookies mixture – preferably somewhere cool like the fridge for a few minutes
  8. Once rested roll into walnut sized balls and place onto the baking tray
  9. Cook in the oven until lightly brown – the will firm up when they cool down so be sure not to over bake!
  10. Set on a cooling rack
